And let them eat cake - carrot cake, that is.

So for my best friend's birthday, I made the King Arthur carrot cake. For her cake, I followed the directions to the letter as she likes the richness, as well as doubling the frosting. Yes she wanted extra cream cheese frosting.

Man alive, this cake is lethal! Needless to say, I was prepared for the temptation - that's why I made the healthier recommendations for the carrot cake cupcake/muffins right after I made the cake.

King Arthur this is one carrot cake that is in a league unto itself!

I'm going to look this cake up right aay, and put it in my recipe box.... I LOVE carrot cake with cream cheese icing, and I make a mean cream cheese icing. All it needs is a carrot cake...and the cinnamon rolls I put it on...

Sandy - I read all the reviews, but WOW, it's beyond description! Oh, and definitely the little option to add to the frosting - oy vey! [I improvised and it still worked.]

It's a good thing I'm sending it all home with her as I ABSOLUTELY don't need this temptation lurking in the shadows!

Oh, I love carrot cake and carrot muffins. I could make myself sick eating every bite! This one will go into my recipe box. Thanks for doing the QC for those of us with not so much will power! 😃

Cindy - believe me, if it weren't for the fact that I've been doing extremely well in keeping my blood sugar in check, I'd devour one gigantic slice. And then as I'd drift off into a diabetic coma I would be muttering "but the carrot cake made me do it."

Believe me, with the healthy recommendations, these muffins have nothing to be ashamed of!

You said it! When I made this cake I put it in quick bread pans, sold it that way, too. I gave out samples and it flew off the table! I had people coming back after buying a loaf and saying "Her carrot cake is out of this world!" Made me so happy! Thanks, KAF!
