Anybody have a gluten-free "flour" tortilla recipe??

My son loves burritos, but gluten's not such a great thing for him. I'd love to find a recipe that makes soft tortillas that can be frozen or refrigerated and will hold for about a week.

Also love to know if you roll them or have a press.

I did a quick search and it looks like there are a bunch of recipes out there - just do a search for "Gluten Free Tortilla Recipe". Here are a few I found:

The third link is a blog that shows how to roll them out by hand. I don't think any of these use a press. Hope this helps. Happy baking!

There's a good recipe for gluten-free crepes in RLB's The Cake Bible, it uses cornstarch. Might make a good burrito base too.
