Bakery tray for St. Patrick's Day!

Yay! I volunteered to make baked goods for a fundraiser breakfast. Good for me, I get to bake without eating the goods- fits my diet perfectly!
So I'm thinking of mint chocolate chip muffins, a variety of scones, a few butter braids, maybe those not so sweet lemon buns that I think are S shaped, maybe a lemon poppyseed bread....
Someone else is making Irish soda bread.
There will be a full breakfast with eggs, pancakes, meats, etc.
Maybe I'll try that recent recipe for lemon curd.
What do you like to bake for St. Patrick's Day?

Last year I made Irish Apple Cake out of Darina Allen's cookbook. They're somewhere in between a cobbler and a pie.

I've since adapted the recipe to make it in ramekins rather than in a 9" pie pan, I'm sure they make tin foil ramekins.

Mmmm. Love Apple Cake! I'm sure it would go down well in small portion sizes too. (Although I'm quite capable of demolishing a full size one over a couple of days!)

I did the recent lemoncurd recipe, slightly different to my usual one and it came out fine. Very quick and easy too.
