baking cookies and cakes do not rise. i am using the same recipes but getting different results. any suggestions on why?

i am thinking this could be my oven temperature. maybe stove malfunction. same recipes used. i don't havea oven thermometer.
i am in florida in ac but outside it is over 94.

Hi,I would check your baking powder and baking soda freshness dates and make sure they are still up to par.If they are not fresh you will not get a rise out of anthing.
If you can,do yourself a favor and invest in an oven thermometer.I don't think there is an oven out there,old or new,that is accurate.I bake in ac all the time in summer(southern virginia) and that does not seem to adversly affect my baking,it is usually human error.Hope this helps.Happy Baking

Do they get brown at all? You may be right about your oven temperature. An oven thermometer is a handy thing to have, and you can get one at most supermarkets for less than $10.

Check the ingrediants as above posts. I have found my cookies will go flat because I do not have enough flour. I usually add an additional 1/2 cup so the dough is not overly sicky. I have, after forming a nice ball of cookie dough, I roll the ball in flour and put on cookie sheet. This makes the cookie hold its shape when baking and does not go flat.

Thanks ffor this. I have wondered about doing this but i was afraid the cookies would be too dry. I bake cookies each week for our square dance group. They eat them however they turn out. It is a matter of getting it right.

Hi robynechristmas20,

I did check the baking powder August of 2011. I think I will send this box to the fridge as I have one in the pantry Dec 2011.
The soda I forgot to check but will do so at your suggestion.
Everyone agrees I had better check my oven. I have a Maytag Gemini which is only about 5 years old. I did have some problems with the self cleaning mode. I shall run out and pick up a oven thermomoter.
