Bami dinner ??

Frick asked about soup in the Q&A forum. GinaG and I got a little carried away with more personal stuff. The end of that so far is that I invited her to come and eat Bami .Now I want to extend that invitation to any other baking friend who lives in So.California area. Frick ? You are the only one I know who lives close enough. Are there others who would like to join us ? This is just a very loose plan still. No set date yet.But it would be fun. I don't think any of you living far away would come, unless you were planning a trip to California anyway. You certainly would be welcome. So that is all for now. Ria.

What is Bami?

omaria

DHL, Bami is an Indonesian noodle dish. You have any kind of left over meat (Pork, beef, chicken even shrimp) Sir fry leeks, onion, celery, nappa cabbage.Add spices, cumin, coriander, turmeric, garlic, ginger.Add a sweet soja sauce, a red pepper sauce.Serve with sliced up banana, fried eggs and pickles.. It is a family favorite even the married-into family love it and will ask me to make it.

OMARIA:
Good morning my friend. I am sure if it's free our dear friend Gina G will consider herself living close enough to accept & attend your soup tasting party. If I think I can aford to rent a auto I may consider attenting for the PEA SOUP...I will bring my own can of ANDERSON'S PEA soup just in case I do not like your version....no offense but I do have crazy taste buds. I also employ LEEKS % OR ANISE in my pea soup cooking but I cannot seem to get the taste that I am looking for. I also insert tarragon vinegar as well as the dried herb. But, always a big disappointment for me. If I eat your pea soup I expect the recipe for same on way out. (LOL...I know I can be terrible % bold at times that's what the young ladies always told me when I was younger)

Hopefully it will be for a noon get to~gether,so that I will have enough time to drive back home all in one day. I do not wish to stay overnite in a motel.

It is nice to post with you once again my dear friend. Enjoy the rest of the day.

~CASS

Mike Nolan

I don't think I've had pea soup that used anise or tarragon, though I do see some recipes for it on the Internet.

I haven't made it in a long time, but I used bay leaf, basil, thyme and a bit of sherry.

Do you use a ham hock in it or is yours a vegetarian soup?

My grandmother used to make a split pea and watercress soup, she'd make us traipse through the woods in the country in late winter to find fresh watercress for her in streams where she knew it grew. I haven't thought about that soup in well over 40 years!

dachshundlady

Sounds like Thai fried rice but with noodles and variation in spices. What I love in the Thai dish is rice vinegar. Mmmmm. Basically really tasty leftovers!

omaria

Cass. I will make my pea soup for you. You must promise however to taste a little bit of the bami also. There is 1 problem. I would NOT let you drive back and forth to Vegas in 1 day. You can stay overnight with us. You just hop on I-15 and drive all the way down till you hit Murrieta. How easy is that ?

GinaG

Dear Mr. Cass:

I too, use anise in my pea soup and I'll share my secret with you for getting that flavor: Grind up your anise seeds in a coffee-grinder. Use anise-enhancing herbs like tarragon or a nice blend of Fines Herbs which also marry well with the peas and the leeks.
If you don't already, do buy your dried herbs and spices in bulk at the health food stores, they're fresher and you don't have to spend so much.
I use homemade broth--vegetable, usually--then a thick slice of prosciutto, cubed-up; or a ham shank or ham hock.

My father's taste-buds have been bachelorized, he likes processed, canned foods and he got very jealous when I offered a bowl of split pea soup to a neighbor-friend who wanted seconds. Boys!
P.S. I have a friend who can fly you in from Vegas. You'll have to jump from the plane over Marietta, but his aim is good!

GinaG

Omaria,

Pammyowl wants to come but she can't make it til next near, after February. We talked about how much fun it would be to plan a mini-foodie-tour in S.F. and the outskirts, like the Napa Valley, then shoot down to Southern CA for Bami...And of course to put you on a Boogie Board at the beach!! Won't that be fun?!

omaria

Pammyowl wants to come ? Wow that is great. Of course we can do it after February. Like I said, we have not set any date. June, Juli might be too late . We are thinking about going to Holland and it will probably be in those 2 months. I have 2 more rooms for guests, besides the room for Kidpizza. His will be my downstairs room so he does not have to climb stairs.Oh it will be so much fun to all meet. Frick, where are you?. I am counting on you for sure.
I'll get the boogie boards from the grand kids ready .

GinaG

We're not going to make you put us up like that! You'll be busy enough making Bami!

omaria

Listen to me girl!! There is no reason to sleep anywhere else, unless you want to go to your friends in Temecula. I do have the room. Upstairs 1 bedroom with queen bed, 1 room with 2 twin beds (kids room) they are what they call Jack and Jill rooms with a shared bathroom. Downstairs another bedroom with its own bathroom. And if more people want to come, air mattress on the floor can work for 1 or 2 nights.I'll clean up my sewing room.So you are more than welcome.

pammyowl

Actually, I'm thinking late Feb. Does that work? I'm definitely coming to CA, no two ways about it! I'm excited already!!

omaria

Any time is fine with me. Pammyowl I think it will be so much fun. I think it is time to tell my DH that we will be having company at the end of Feb. He does not know anything yet. Don't worry, he is a good guy. LOL.

GinaG

If we do late February it's still our winter here, is that okay? Our weather really warms up in March most of the time.

pammyowl

Alright, whenever works for everyone. I can't come after May 1st., that is the only limitation I have.

hickeyja

I'll be in Escondido, at my sister's house, at the end of March. Our nonprofit has a booth at the the SD Science Festival and I will be there helping out. Please stop by if you get a chance. Hope you like snakes and lizards and bugs! Jan

omaria

Hickeyja, you could come for dinner too if we do it end of March, couldn't you ?Would your sister mind if you would leave her for 1 evening ?
I think my grand kids would love to go to SD Science Festival.Ria.

GinaG

Oh, this is sooo exciting: We have a crowd forming, isn't that fun? And plenty of time to plan lots of trouble to get into!

dachshundlady

If you have a big level driveway and we can get the motor home shoveled out, I will be there too. [:^D
Seriously, I don't know when our big cross country trip(with all the dogs)will be. The 2 week one to New Brunswick was tiring enough. I can't imagine being on the road for a month or 6 weeks.
But I will expect reports here on your wonderful dinner.

omaria

DHL, no level driveway. It slopes a little, but plenty of room on the street. Have a fenced in front yard with grass. The doggies could all play there. Well, we can dream.... I am sure all the planning and reports will be here on Member News. So everybody can be part of it in spirit. LOL. Ria.

mrscindy

Gina............do I have to talk with Ria about keeping you under control? Are you already planning trouble for the Bami Dinner?

I would love to come, but with the Isreal trip in mid March, I'm afraid I can't make it. I was waiting for the date to be set. Sounds like the end of March. Shoot, I love a good Foodie Fest! Just ask KathyD. I flew to NY for the Bread Crawl.

Gina.........try hard to stay OUT of trouble!

~Cindy

mrscindy

Ria, watch out for GinaG. She could be serious trouble. Keep her VERY close at all times. I think trouble developes when you lose sight of her for a millisecond! I feel, since we have a close relationship, you and I, that I should warn you. Your house will never be the same.

~Cindy
p.s. Do you have plenty of fire extinguishers? ;-))
~C

MIKE:
Good day. Yes Mike, I do use either a thick piece of ham or double smoked bacon...I favor the bacon, but next time I will use both. I use some carrots as well as 1 or 2 bay leaves.
Perhaps I will get lucky one of these days & I will hit the bonanza.

Enjoy the rest of the day Mike.

~CASS.

frick

I don't know where I was when you started this thread. Of course I'll be there for the Bami dinner. I can handle pickles and sliced bananas but can I skip the fried egg? It'll be the SoCal Indonesian version of a cooking trip to Italy!

I can't wait to meet all these crazy bakers who will drive (or fly) 4-6 hours for a meal that includes no baking at all! KidPizza, GinaG, pammyowl, jan, maybe even dlady. You pick a date and tell us what to bring.

Maria, I'll bring some "stuffed bacon" from Shreiner's . . . and anything else that tickles your fancy.

Maybe Cass will share his shortbread recipe.

GinaG

I cannot wait! This is going to be so much fun!
Now frick, what IS stuffed bacon? I just peeked on their website and didn't see it.

dachshundlady

Sounds like something Paula Dean would make like deep fried Mac and Cheese!

hickeyja

I am waiting for Paula Deen to come out with a recipe for deep fried butter! Seems like all her recipes are fried or butter and more butter or both fried and butter. Jan

mrscindy

Jan, quick question, off the topic. Have you ever made the Bacon and Egg Breakfast Cookies? I know your sister did, but I was wondering if you had. Do they taste at all like a cookie? Sweet? Savory? I have a very picky little eater we are trying to find food for. Any input or help would be greatly appreciated!

~Cindy

frick

GinaG, you haven't lived until you have some stuffed bacon from Schreiner's. Here is the link from my earlier post:

http://community.kingarthurflour.com/content/optimum-pig-not-baking

Here is link to Schreiner's (and I live just half a mile away):

http://schreinersfinesausages.com/

Here's my email also: beyt@att.net

We'll need yours and pammyowl. Bami dinner and all these goodies. I think I'll need to bring Maria some of those pickles she craves.

GinaG

Wow. my mouth is watering! I would love to GO there! It sounds like a place you'd find in San Francisco, we still have butcher's there who smoke their own meats.
I'll e-mail you right now so you have my contact information. I'm so excited, i can hardly stand it! This is going to be so much fun meeting and EATING!
Ciao,
Gina

mrscindy

Have we set a date for the Bami dinner yet?

~Cindy

hickeyja

I have made them. They are very much like cookies, but not too sweet. I use all WWW for the flour in them. I prefer them with apple juice concentrate and apple chunks (Granny Smiths diced fairly small) in them; apple seems to go better with bacon to me. To up the nutrition and make them a bit more to the savory side, you might try adding swiss or cheddar cheese too.

I have thought about replacing the Grape-Nuts with toasted, old fashioned oats, as I don't usually have the Grape-Nuts in the house. We always have oatmeal. That would probably make them a bit more cookie-like. Jan

frick

OK, here's my original description of the "stuffed bacon".

A taste sensation worth writing about. If any of you are anywhere near the Glendale area of Los Angeles, I have a place for you. My local German deli, Schreiner's, has a new product called "stuffed bacon".

It's a gently smoked pork loin (Canadian bacon) and two Polish sausages centered in a slab of bacon, rolled tightly, and gently smoked. Their products are mimimally salted and have less preservatives (they don't keep but a very few days). Thinly sliced like prosciutto, it is heaven. Of course, what goes with it best is wonderful home baked bread and some giardinera or tiny gherkins, maybe a little potato salad or slaw. Yum.

It looks like a giant coil and a slice is about the size of a generous salad plate. It's completely cooked, though it sort of looks raw. You eat is as is, either thinly sliced, or on sandwiches, or sliced 1/4-inch thick, gently sauteed and served for breakfast or brunch.

pammyowl

Is Glendale anywhere near Altadena?I have a dear friend there, I could have her pick some up! Otherwise, GinaG and I can swing by on the way to the dinner!

mrscindy

What I am up against is this: she is 8 years old. Mom has never enforced any good eating habits and has none of her own. She eats white bread, bacon, Kraft Mac and Cheese (if I make it), strawberries (dipped in chocolate, only), corn, butter on a spoon and will drink a glass of milk.

I made Chocolate Bread (with WWW and Oatmeal) with chocolate chips and, together, we made chocolate butter. This was supposed to be her breakfast since she never ate breakfast. She ate it for about three days then decided she didn't like it anymore. This morning her breakfast was a piece of store bought white bread. I makes me nuts!

When she is at my house we cook. We've made chocolate chip cookies and frozen the dough so she can take it home to bake off and eat at home. She loves to cook with me. Recently I found out mom let's her eat these CC Cookies for dinner. AAAARRRRHHHHHGGGGGG!!!!!!!!!!!

I'm afraid if she 'helps' me make these Bacon and Egg Cookies, she won't eat them because there are things she doesn't like in them. I'm thinking I can take the basic recipe and grate the apples and grind the toasted oats, maybe add cocoa powder? Maybe use some smashed up flavored granola, which I have, instead of Grape-Nuts? She likes bacon and, until recently, would occasionally eat scrambled eggs, so I may have an edge there. I just don't know. Of course, if she won't eat them, her mom will and mom's nutrition isn't any better than the child's, so she would benefit from them.

Okay, talked myself into it. I'll see what I come up with tomorrow. I'll let you know! :-))

~Cindy

pammyowl

Good luck! When my daughter was little, we had one of her cousins over for a sleepover, and she declared, obnoxiously, I might add, that she would not eat scrambled eggs, no way, no how! When she saw me grate cheddar cheese into them, she must have thought,Hmm, maybe I'll give it a try. To this day, she remembers those eggs! By the way, she grew out of her obnoxious ways! I am going to give this recipe a try, too. I'll add cheese!

On the topic of traveling to the west coast in our motor home: After our trip to New Brunswick with friends who towed a jeep behind their big rig, we have decided we need to tow a little car in order to really enjoy the cross country trip. If you can park and then take the car, it makes it so much easier than breaking camp every time you want to go see something. This means that I need to trade in my Volvo wagon, which I love, for something that will suite my needs when we aren't on the road. I have been thinking about a Mini Cooper Clubman (a little bit longer). Does anyone out there have a Mini Cooper? I also need a car that is towable and whose back seats fold flat for my dog crates. Now that I read this, I think I need to call the Car Talk guys!

GinaG

Dlady,
How practical is it for you to get a car that accommodates a 'sometimes-occasional' need? Mini-Cooper owners love their cars, but to give up the comfy seats and convenience features makes driving less of a pleasure and it can be fatiguing. I'd look into alternatives such as renting cars or getting a second car and keeping the good one. If I was in your situation, I'd look at the Honda Fit as a second car because it has big flat cargo room and some of the features you're accustomed to. It also has high resale value if you need to trade or sell it.

hickeyja

When my in-laws were traveling the country in their motor home (right after they retired), they got themselves a couple of small motorcycles/mopeds. Dad mounted bicycle baskets on the fronts and milk crates to the back and off they went! It might be more difficult with the dogs, but you might think about a small, inexpensive used car of some sort for just traveling. Jan

mrscindy

I made cookies this morning and, boy, are they good! I really changed things up. This is these are the ingredients I used:
1 cup AP
1/3 cup WWW
1/3 cup Vanilla/Almond flavored granola, pulsed in FP
1/4 cup cocoa
3/4 cup brown sugar
1/4 cup Flax meal
1/4 pound bacon, chopped into small pieces and fried crisp
1 apple, grated
2 eggs
1/2 cup Crisco, melted

Since I used two eggs and the grated apple, I did not need the extra liquid from the OJ or apple juice and did not want to open a bottle for 2 Tbsp. I added the cocoa to disguise the flax and anything else she might object to. The added sugar and apple made it sweet enough to be like a 'real' cookie. I ended up with 16 cookies about 3/8" thick and 2-1/2" wide. I used a #24 scoop and flattened them with my fingers. Baked at 350F for 12 minutes. Now we just wait and see! I thought they were very good!

~Cindy

hickeyja

Wow! Lots of changes. I am glad they turned out well. Hope the child likes them and that she will actually learn better nutrition from you. You are a great friend to take this on. Jan

omaria

Sorry Pammyowl, I did not see this sooner. Yes Altadena is close to Glendale. Do you want some of that stuffed bacon to take home with you ? Frick lives very close by that butchershop and can easily bring some for you.

dachshundlady

Believe it or not, there is something about the Volvo (our 4th) that now bothers my right leg. Think it is the sciatic nerve. The motor home and my husband's truck doesn't bother me as much. And since we have the RV, his truck and I need a car, we won't be buying a 4th vehicle. But will look into the Honda. We had the Accord when it very first came out and loved it. And we have considered bikes and small motorcyles but I think of our drive around Acadia in the rain. Wouldn't have wanted to try that in anything but a car. It is the old dilemna with motor homes. Do you get one that drives and everything, including dogs, is right in there with you, or do you get a nice trailer that you can park and drive off with the car. Since I go alone to dog shows ALOT, I didn't want to jack around with the parking and set up of a trailer. With the motor home I can drive or back it in, level it, set up the awning and I am all settled.

pammyowl

The Accord is a great car, but if you want a small car with room for kennels and such and you like Honda, perhaps the Honda Fit is what you are looking for. Just a thought! Happy Thanksgiving!

By the way, I drive a Chevy, so I'm not hawking, fellow spam spotters !

mrscindy

No, Jan, I'm just to stubborn and hard-headed to let it go! :-))

Have a great Thanksgiving!!

~Cindy

GinaG

Ugh! Sciatica? Do yourself a favor and make sure the seats in whatever car you choose are comfortable. I mentioned the Honda Fit because it would make a decent compact car with plenty of cargo room, but you'd be giving up rear passenger space to use all of the cargo space. The Element may be a better option with the dogs because you have a floor that you can wipe down if the puppies get the pukes!
The choices can be overwhelming, but I highly recommend that when you're close to making a decision, ask the dealership for a borrowed car agreement. This enables you to take the car; use it in your typical daily routine, and really see if it's suitable. They might not want you to do this with a brand-new car you aren't likely to buy because someone will, and they want to minimize mileage on it, but a demo, used car or a rental will be options that can accomplish the same thing. Many RV'ers like the CR-V because they can tow it.
On the subject of Bami Dinner, I do hope you'll try to come!

pammyowl

How funny that Gina and I both said the Fit! I didn't even see her earlier post. Sorry!

dachshundlady

We always try to buy a demo but never heard of the borrow agreement. My agility friends love the Element but said they no longer make it. At least I think it was an Element. Is there another car that looks square like that? My sister likes her CRV. But you have to understand that our RV is only 24 feet so we want to pull a really light car. It is one of those little motor homes on a Springer chassis with a Mercedes engine. Similar to the newer Fed Ex trucks but wider.

frick

pammyowl, Altadena is very close to Glendale, if you will be seeing your friend, however, I will be bringing a goodly amount of the stuffed bacon to the Bami dinner. If you will be seeing your friend before then, have her call them to see if it is available. It's not always there.

dachshundlady

See. that's pretty small!
