Dear Swyn,
Let the dough rest for a few minutes and try again. The more you fight it, the tighter it gets, so just for now, leave it for about ten minutes. If it starts shrinking again while you are shaping, wait another few minutes and try again.

gina is right...sometimes you just have to say 'enough' and walk away.....i have an italian bread recipe that acts the same way and it takes 2 or 3 rest periods during the shaping....i find it a good time to start cleaning up the mess i've made in the kitchen!

Yep.... When the dough gets stubborn, walking away for a bit is the only solution......it will eventually get the hint, and relax.
