Cake

Can this cake (recipe on line) be made substituting King Archur gluten-free flour? Would other ingredients need to be changed? Thanks.

Hi,
This will be an experiment. At a minimum you'll need g-f flour and xanthan gum. For cakes, I suggest using 1/4 teaspoon of xanthan per cup of our g-f flour. Other ingredients may need to be changed, but the first trial with a straight flour and xanthan substitution will tell a lot about which way you may need to proceed. Frank @ KAF.

Harvey Wallbanger from Scratch

13.875 ounces or 2 2/3 cups GF flour blend - which ever blend you prefer. KA GF flour blend* works out to be 5.2 oz per US cup. I would weigh as I do not use that blend.

Check that your baking powder is GF

Check the vodka is GF - sometimes made from grains

1 1/2 teaspoons xanthan gum at least - a lot of fluid ingredients [I use 3/4 teaspoon per 5 oz GF flour]

DO not over bake.

Check kitchen, appliances, tools for contamination by gluten.

Notes*
6 cups (32 ounces) King Arthur stabilized brown rice flour;
2 cups (10 3/4 ounces) potato starch;
1 cup (4 ounces) tapioca flour or tapioca starch.
9 cups GF flour blend = 46.75 ounces or 5.2oz per cup
