Croissant video tutorial this weekend

As requested by MrsCindy,
I shall be posting a croissant video tutorial this weekend on YouTube (bakeinspain). I shall try to post each video as the stage is complete. If you want to try it too, here is a link to my recipe. The butter must be unsalted, high fat content (82%), you can use either fresh or instant yeast. I use skimmed milk and a flour that is labelled at 14% protein (though it may be lower, quality control here does not seem to be that good!)

Ok, have spent the entire day making, filming and uploading the making of croissant dough and it is now complete and in the fridge till tomorrow am.
The whole lot has been posted on YouTube 'bakeinspain', from starting the mixing of dough, right through to the final fold.

Tomorrow I shall be up with the larks (are there larks in Spain? I know there are some VERY noisy birds on my roof:)) in order to roll and fold. I shall be dividing the dough in half - one section for croissants, one for raspberry danish. That, thankfully will be relatively easy. Too be honest, the hardest bit is doing the filming and the computer work!
BTW - all you need extra for the danish are a few frozen berries and some jam, with a little lemon water icing if you want to be really decadent!
