Ingredients
date h2o brown sugar butter vanilla flour oats brown sugar melted butter salt baking soda
Instructions
Matrimonial Squares (always moist, if not overcooked)
In an 8-cup Pyrex measuring cup or bowl (or heavy pan for stovetop)
3 cups chopped dates
1 1/4 cups water
1/3 cup brown sugar
Cook in microwave about 10 min. (or in heavy pot on stove top) until dates are tender
Remove from heat,
Add….
2 tbs. butter and 1 tbs. vanilla
Let cool till warm – or you’ll be burned by splashing dates
Using portable mixer, beat the dates till smooth, to break up
In separate bowl, combine….
1 ½ cups all-purpose flour
1 ½ cups rolled oats
½ tsp. salt
½ tsp. baking soda
1 cup brown sugar
Add…
1 cup melted butter
Combine with your fingers till well blended.
Place ½ the mixture in a greased 9”x9” pan.
Cover with cooked date filling. Top with remaining oatmeal mixture.
Bake in preheated 350 degree oven for 25 min. NO MORE…or your date squares will be dry and over-cooked.
Date mixture can be made a day ahead. When you are ready to prepare your squares, you will shorten the time required to put your squares together.
