Did you know you can make waffles without eggs?

The other day we were stuck for what to do for supper, so I suggested waffles and bacon.

My wife made the waffle batter using Bisquick Heart Healthy mix, but accidentally left out the eggs.

The came out a bit crisper than normal (a bit like Belgian waffles, actually), and were quite good.

Say, Mike: Did you know that Bisquik makes a GF pancake mix? That may come in handy for your DIL. You can bake and do all sorts of things with Bisquik.

Yup, there's a box of it on the shelf, too.

There are several good GF pancake mixes available, but I don't know if they'd work without egg.

thanks for this...the mad scientist is supposed to be on a low cholesterol diet, but loves waffles...this will help!

Low cholesterol waffles?

Of course. Egg whites only, a good place to use egg white powder if you have it. Sub oat flour for 1/4 of the wheat flour. Use applesauce instead of oil in the batter. Add a dash of cinnamon or nutmeg, or a drop of vanilla to the batter.

But I would NOT use cooking spray instead of oil on the waffle cooker. I would brush with something like almond oil for a real treat.

i'll pass this along to himself....i'm indifferent to waffles, but he'll be thrilled with this!

if you want egg and dairy free recipes, the following link is great. the recipes all have healthy bits to them (ie ground flax, etc), but not to the extent that they taste "healthy." all recipes egg and dairy free, but some do have gluten.....

So, this morning we made pancakes without eggs.

They were a bit on the chewy side, so we added a tablespoon of orange juice to the batter, that made for a much fluffier and softer pancake.

Mike, are you skipping the eggs to avoid their affect on cholesterol? I'm no authority (since I hate eggs) but my DH did like eggbeaters for a while, then tired of them. However, they seem a natural for use in pancakes and waffles. For when you run out of orange juice, of course.
