"on the fence" fudge brownies

I absolutely LOVE these brownies. My daughter wants me to make them for her Kindergarten class on her birthday. I would like to know 1......if its okay to DOUBLE this recipe? AND 2......should I make any changes to the recipe in order to make these in mini muffin pans? I have tried so many brownie recipes and this recipe is by far the absolute best.

Amy, I often double this recipe; as you say, people like it so much, I find myself having to make a double batch for big gatherings or bake sales. No need to change any of the ingredients.

As for baking time in a mini muffin pan - it would be shorter. Don't know how much shorter, but it might be worth the extra time to bake just 2 or 3 first, and let them cool for about 20 minutes to check the texture. If it's good, bake the remainder. I suspect this is going to make quite a few in a mini muffin pan, and the last thing you'd want to do is over- or underbake the whole batch. Enjoy!

Thanks so much!! I'm glad that I can double it with no problem. Yes, indeed it will make a LOT of mini brownies. lol
You certainly have been a huge help, and I will let you know how they come out for me. I think the only thing I may change will be to lessen the amt. of espresso I use, as these will be given to 6 yr. olds. lol
