freezing pumpkin roll cakes-how long and the best method


I am making desserts for a benefit in October. One of those desserts will be pumpkin cake rolls. What is the best method for freezing these and how long can you freese them for?

These are really best frozen unfilled. Any chance you can bake the cakes, freeze, then fill and roll just before? Cakes will stay good in the freezer for 4 weeks or so, well-wrapped, but filled cakes, when they thaw, tend to become VERY soggy; and the filling is likely to separate and become grainy/watery, as well...

I've made pumpkin rolls for many years. Wrap tightly in saranwrap then in aluminum foil making sure that you fold the edges over to make a good seal. When you thaw the rolls, just leave them wrapped. Just before serving sprinkle with powdered sugar.
