GF Puff Pastry

Has anyone made gluten-free puff pastry? I'm wondering if it is possible to get the same flaky texture as with wheat flour? I've seen some recipes online, but I don't want to go to all that trouble and be disappointed with the results.

I've tried it once or twice, I haven't really found a recipe that I like.

I don't know about duplicating the generic store bought.. I lump that with all store bought crust and avoid it.

I had good luck with my first shot at a GF puffy pastry with an almond puff recipe on the KA site: http://www.kingarthurflour.com/recipes/almond-puff-loaf-recipe.

I just used KA GF flour and added about a tsp of xanthan gum for each layer. I've made this recipe with wheat flour a lot of times and this came out pretty close. I use chick-pea based flour in some things, but IMO the beany taste would not be good here.

This is formed in place on the baking sheet; you couldn't pick it up like a generic sheet of puff pastry.

What a beautiful website! Thanks for the link. The Mille Feuilles looks spectacular and I'm looking forward to trying it. Also, her comments on why she's trying gluten-free adaptations to her recipes were interesting. I have some of the same medical conditions, and noticed that going gluten-free recently seems to help.
