gluten-free hamburger/hot dog buns

I just received my KAF hamburger and hot dog pans but I can not find a recipe for the dough. Can I convert KAF's hamburger and hot dog recipe to gluten free? Gluten free dough is usually not formable so can I just drop the dough in by the scoop? And how would I make the hot dog pan work?

I found a recipe for gluten-free baguettes that had you put the dough/batter in a pastry bag with a very wide tip (or no tip at all) and pipe baguette shapes, the same technique might work with the hot dog pan.

I think the Brazilian cheese buns recipe (which is gluten free) might make a pretty decent hamburger bun (probably without the cheese). The dough can be made stiff enough to roll into logs, so you may be able to make hot dog buns as well.

I've also used them in place of English muffins for eggs Benedict.
