How long does whole wheat flour last?


I know we're supposed to keep our whole wheat flour in the fridge or freezer, but mine simply doesn't have the space. How long does whole wheat flour keep in a dark pantry and what should I look for smell wise to determine if it's gone rancid?

I have two types of whole wheat - white Ultragrain (all purpose, but it's still whole wheat) and KAF's normal whole wheat flour.

If you can keep it cool and dark, it should last several months.

If it goes rancid, it will smell bad and taste bad.

I really don't k ow the answer to your question, but I use a lot of WWW, and keep it in a cabinet, with all the other flours. I keep it in a large plastic canister, and have never had a problem.... But, I have to admit that my flours get used up fairly quickly. I'd guess a bag of flour... I keep KAAP, KABread Flour, and KAWWW... lasts from one to two or three weeks, depending on how much baking I do. I am always surprised at how much flour I use.

I don't think I did any baking at all for the first six weeks or so after I broke my arm, and all of my flours, including the WWW Stayed fresh.

I hope this has helped a little. Oh yes... I think the conditions surrounding the flour determine, to some extent, how long your flour will stay fresh... Heat, humidity, etc...

I've had whole wheat and rye flour for over a year without it going rancid. I know that it CAN happen, but I've never actually had it happen. Keeping it in the fridge is safer, but sometimes I forget ... like usually.

I looked on the bag of KAF whole wheat and it says the best by date is October 2012. I'm sure 5lbs will be used up by that time. I'm really considering getting a 25lb bag from Costco (another brand, but whole wheat), but I'm not sure I can use that much even within a year.
