I have a yeast storage question

We make about 3 loaves of bread every 2 weeks for the 2 of us. I've been buying yeast by the packet because it's easy ~ pre-measured.

In browsing thru the shopping section of this site I noticed the 16 oz bags of yeast. They are a tremendous saving$!

What's the proper way to store those bags and how long can yeast be stored for without deteriorating?

Hi Chris,

KAF also sells a container for your yeast, but . . . I put some yeast in a glass jar (I used an old jam jar) and store that in the freezer and the rest of the yeast in a ziplock in the freezer. I use the SAF instant yeast and never had a problem. Some people keep a small amount in the refrigerator instead of the freezer. You can search for other threads on yeast storage. There have been quite a few.

Hope this helps.

Thanks Carol, I'll check for other threads. I'd sure like to know how long yeast can be stored. There's no savings of the product goes bad.

What Carol said. Use what you need, store the rest in an old jar in the freezer and the yeast will outlive all of us. Ignore the sell-by date on the package.

Chris,

I bought mine last November and ran out in September. Some people have kept it longer.

I just put it in a plastic container and keep it in the freezer.

It'll last over a year there.

I keep a pound in the refrigerator. It lasts at least a year with no deterioration in quality. You can't go wrong buying the pound. In just a few weeks you will save a bundle of money over buying the packets.

when i buy the puond, i put about half in the freezer, double bagged in zip plastic bags...the other half i keep in the fridge for frequent use...i've never had a problem with it.

If you belong to Sam's Club or Costco you can buy a two 1 pound packages from them. Keep both in the freezer. One to use from, the other in reserve. I've had yeast last for three years like this, with no problem. Once you start baking your own bread, the little three paks get quite expensive. Check out SAMs or Costco. Many of us use their yeast.

I have yeast that is stored in the freezer and still working perfectly after 4 years. I make great bread every time with this yeast!

This sounds very similar to what DW does. One active jar of yeast in the fridge, refilled from 1 lb block in freezer. She makes a 4 load batch every two weeks, plus special occasion stuff, so the amounts are about the same as OP.

I purchased some Fleishmanns Instant yeast in a 1 lb vacuum packed package locally and stored it in the freezer in a zip lock bag with a clothespin holding the rolled up foil bag shut within the zip lock bag. I had opened and used some.

Somehow the yeast got pushed to the back of my freezer in the garage and I found it about 6 months ago. I had purchased new yeast in the interim. The lost package has an expiration date of 2006. It still works fine in my bread machine and bakes good bread that rises properly. I don't even proof it, just add it dry to the bread machine.

So if you store your yeast in the freezer, with the foil packet sealed tightly, sealed in a ziploc bag, it works for at least 6 years.

I have new, Golden SAF Instant yeast from King Arthur, but I going to continue to use the 6 year old yeast until it's gone (about 1/2 the pack is left).

If stored properly in the freezer, I guess it lasts forever.

It looks like it would be a frugal move for me to switch to buying 10 oz yeast packages. It's helpful to know what others have experienced with this larger size ~ thanks everyone!

I have whatever's left of 2 lbs of yeast (probably most of it) in the freezer, and I keep a jar from the last jar of yeast I bought in the door of the fridge, which I refill from the freezer. I've refilled that jar about 3 times since popping open the main supply. I doubt I'll be able to use it all before my son graduates, gets a real job, and we have to move and leave it behind, LOL!

I paid $4 for it - currently it's priced at just under $5 - but given I was paying $6 for the little jars, if I threw it out today, I'd still have saved money.

Hi... I buy my yeast.... Both SAF Instant and (usually) Red Star Active Dry Yeast in bulk, I put most of it ib glass jars, which go into the freezer, then put smaller amounts in glass jars that go into the fridge.

I've never seen Fleischmann's Yeast in anything larger than the little jars.... I have always wonder why they don't sell one or two pound bags.

I think buying yeast in bulk....or n a pnch in the jars....is much more economical than being those little packets... KA sells a measuring spoon that equals a packet... Not expensive, and really helpful.

I bought the Fleischmann's yeast from a chain called Smart and Final (but that must have been in 2004 or 2005). They carry institutional sizes of foods. I live in Sacramento, CA.

I bought the King Arthur yeast measuring spoon and have attached it on the ring holding my other stainless measuring spoons. It's a great gadget I use it all the time.
