ISO Rye Bread Recipe Using Beer
I was chatting with an older gentleman in the grocery checkout line. He had a loaf of rye from an area bakery. When I asked about it, he said the best rye he ever had was one made by his wife. She used Moosehead Beer. Has anyone made this?

Sure. Real beer has yeast present.
Mix your beer and the rye flour and let that sit overnight on the counter. Then add the rest of the ingredients the next day. Make sure you use bread flour.
If you like the fluffier rye breads, add some Vital Wheat Gluten with the bread flour and keep the dough soft. I grew up on rye bread that had cracked rye and wheat and caraway seeds in the not-too-sour dough. This beer starter will do just about the same.

I make a fantastic rye bread using beer. It is from America's Test Kitchen and is a rye version of their "Almost No-Knead Bread" which uses beer to impart a tangy/yeasty flavor. It makes a gorgeous round loaf.
