Jammy Bits


I recently acquired both Lemon and Raspberry Jammy Bits. My boyfriend has requested lemon or lemon-raspberry bars. I've never made them before (besides the box kind), and I'd really like to make them from scratch. Does anyone have any tried and true recipes using the jammy bits? Alternately, do you think I could just sub out the lemon juice for the jammy bits and have them still come out OK? Any ideaon what the ratio would be to still get the yummy lemon flavor?

Any help or guidance would be appreciated! Thanks!

Just feeling envious that you have got some! Had to look them up on Google but now that I know what they are I'm going green...I'm in spain, so not much hope for me getting any!

I would suggest you use them as you would use dried fruits in muffins or cookies, not substituting them for liquid ingredients such as juice. I'm sure this site must have recipes for muffins!

I haven't tried them yet, but everyone who does seems to be very happy with them. Will have to try sometime.

The Jammy Bits are better suited, I think, for a granola-type bar. I have used them in peanut butter cookies a few times now, and those inside the cookie held their shape while those on the edges melt into pools of jammyness. In short, it is a toothsome product. Adding these bits to a cake-like mixture would be an odd texture and I am not sure that they wouldn't settle to the bottom of the pan.

I have no experience with the lemon bits.

If the priority is for lemon or raspberry bars, I would go with a classic lemon bars recipe (shortbread with lemon/egg mixture on top...you can find it here at KA) or a raspberry jam crumble bar and use real jam.

If you want to use the jammy bits, then again I would go for a granola bar or you could make cookies in a jellyroll pan and slice them into bars.
