KAF whole grain GF flour
I have been baking gluten-free bread from the "Healthy Bread in Five Minutes a Day" cookbook with great results. I am wondering if I could substitute the KAF whole grain gluten-free flour for the brown rice flour, sorghum flour and tapioca starch the recipe calls for in order to save time. If so, how much of the KAF whole grain gluten-free flour should I use as a substitute?

You'll have to do some experiments, but try first with a 1:1 substitution and see how it goes. Keep really good notes and then start to make small adjustments as needed.
Jeff and Zoe, the book authors are good KAF friends, so you may want to drop them a note on their website or Facebook and see if they have any advice too. Nice folks all around.
