Looking for an Italian Bread recipe for my Zo.
I've tried making a number of Italian Bread recipes and found the to be on the "dense" side. I'm looking for a recipe that will produce a hard crust with a very light and airy inside. Any suggestions would be greatly appreciated. Thanks.

It's best eaten about a half hour out of the oven. Mmmm. Warm bread.
It's a nice medium crust with a light crumb which is easy to do in a home oven with minimal fuss.
I usually do the preferment in a separate container on the counter for about 12 hours, then refrigerate for 12 hours to 2 days.

Just double checked the recipe, and I wanted to clarify.
Since I always refrigerate the preferment for additional time, I will let it sit on the counter for about an hour before I put it back in the Zo so it's not so cold. I then run the standard dough cycle so it gets a warm up to get started in there. Nothing fancy - just dump in the preferment and the rest of the ingredients, select dough, and go.

Too much flour in your dough can also give you a dense loaf. We recommend measuring flour this way:
