Mixing my own gluten free mix
Hi in the catalog it says you can make your own baking flour mix by using KA combination of products. The comment was written that this method will probably be okay. Will cakes, cookies, scones, breads all turn out and taste good with this mix? Should we be mixing different products to make scones via cookies or bread? Your comments are appreciated.

KAF product info also says that they do some special kind of treatment of their rice flour, which they do not sell to make your own GF. They don't want to promise you that your own home mix will be the same.
Get a good book on GF baking out of your public library, or buy one. I really like those written by Annalise Roberts. They use only the kind of rice etc that you can buy from the grocery store.
You use one kind of GF flour mix for breads, cakes, pies, scones, etc. The Roberts recipes adjust the amount of xanthan gum and other gum ingredients, separate from the flour. Those recipes are set up so so that you really only have one flour mix. You buy those gums from a bulk foods store and keep them in separate airtight containers.

I buy the KAF brown rice flour and make the blend. I use this in breads, cookies and cakes. I made the gf chocolate cake and everyone was amazed that it was gf.

I have found some really good flour mixes the the books by Bette Hagman. I use her basic mix in many things and it works great. She has several different mixes and does a wonderful job explaining the different flours and their properties. It has given me a much better understanding so that when I venture out to recipes using regular flour, I can figure out what substitutions would work best.
