My hourglass figured bread....Help!

This is my 2nd loaf (pan de mei 13x4) which although it rose beautifully, and maintained that rise....upon removal from the pan, the sides "fell" for lack of a better word....they became indented, like someone told my bread to suck in its gut. It is still beautifully high, but it's width is more like 3 inches than 4.....and it came out of the oven normally enough. What am I doing wrong????

Hi,
Sorry to hear of the difficulty. From your description, it sounds like the loaf was under risen when it went into the oven. Try a little longer rise, until the loaf can hold a dimple pressed in at the corner. Frank @ KAF.

Thanks. It had risen to almost the top and rose some more in the oven (I didn't use the lid). But it did it rather quickly....maybe an hour, tops. Just to be on the caustious side.....what will it do if I over-rise it....or should I poke it ever 5 minutes?

Allow 15 minutes between tests, you've only got 4 corners. Frank @ KAF.
