order of ingredients
So, I know the order of ingredients are typically wet to dry (wet in first, dry on top). I have a Zo and that is what I understand to be correct. I just bought Beth Hensperger's book The Bread Lovers Bread Machine Cookbook, a master bakers 300 favorite recipes....On page 17 under loading the ingredients into the bread machine it has a chart listing the manufacturer and correct order of loading the ingredients..Almost everyone is under the wet/dry/yeast column..However , they have Zojirushi under the Yeast/Dry/Wet column..Am I crazy..I know other people on this forum own this cookbook, can you give me some input..Thanks
Also, still trying to find the vital wheat gluten she uses..According to her it is not the same as vital wheat gluten flour (which is what I have)..Yikes...

That's a pretty good book but I think that's a mistake. Go by the manual that came with your Zo. I looked in the book to double check and I can't imagine how she made this type of error. I have an older Zo and it's Wet, Dry, Yeast on top in a small depression. I doubt if the new ones are any different.
Correct, vital wheat gluten is not the same as vital wheat gluten flour. I bought my gluten at Whole Foods.
I don't use her book that much, primarily because she always requires gluten and other things I don't care to use constantly. I should dig it out and use it again since I do have some of those specialty ingredients.

Thank you Frick for your reply..At least I know I am not crazy. yes it does seem like a big error in her book..Some of the recipes sound really good..From other comments , it seems that a lot of people follow her receipes but do not add the extra vital gluten and they say it comes out fine..She also seems very picky about the yeast..I bought a 3# bag at Costco and that is what I will use..
I will continue to place my ingredients wet to dry..Just wanted someone else to look at the book..Thought maybe I was reading something wrong...debbie

Just to reassure you even more....I use that book a lot, I ignore the part about adding vital wheat gluten, I load the Zo wet/dry/yeast and I buy the big bag of yeast at Costco. No problems.

Yep, think that must be a typo. The Zo I used to have had water in first and would struggle if it were any other way.
Regards the vital wheat gluten - leave it out at first and see how it goes. I always used to use the basic programme as anything else made my loaves collapse. If your loaf does not rise enough try adding a tsp vinegar to the mix.
