Overnight Sweet Potato Biscuits

Ingredients
1 290z can sweet potatoes
2 1/4 tsp instant yeast, or active dry
1/2 cup water + 1 TBS sugar
3 3/4 cups flour
3/4 cup sugar
1/2 tsp baking powder
1/2 tsp salt
3/4 cup shortening
Instructions
Warm sweet potatoes, can be done in microwave, just slightly warm. Mash them up a bit.
If using active dry yeast, place in water, with sugar, to activate. If using instant, it can be mixed with dry ingredients.
Combine flour, sugar, baking powder, and salt...cut in shortening.
Add yeast mixture, or plain water/sugar, and the warmed sweet potatoes, to dry ingredients, stir until thoroughly moistened.
Turn out onto surface, knead until a soft dough forms. Cover and refrigerate 8 hours/overnight.
In morning, roll out 1/2" thick, cut 2" rounds, allow to rise 20 minutes, or until doubled.
Bake at 350F, for 12-15 minutes, until lightly browned.
