Pan size
I would like to make the Micro brewery honey wheat bread from the KAF whole Grains cookbook. it calls for a loaf pan 8 1/2 x 4 1/2. Can I safely use a 9 x 5 loaf pan?

Yes, you may use the larger pan (it is 20% larger BTW). But do not follow the narrative description. If you allow the dough to rise 1 1/2" over the rim of the pan, it will be over risen and collapse when you place it in the oven.
With a 9" x 5" pan, allow the pan rise to last until the loaf can hold a dimple, pressed in at a corner, about 1/2" deep with your finger tip. If the dimple pushes out, the loaf needs more time. Hope this helps your preparations. Frank @ KAF.
