Passover flourless cchocolate cake
I really liked this recipe as is doesn't involve a lot of extra ingredients, equipment, etc.
Have one question: Has anyone come up with a suitable gluten free Red Velvet cake?
Have a couple of folks coming for Chrsitmas Eve who are Red Velvet fanatics. One just so happens to be celiac. I've tackled gluten free Yorkshire Pudding (thank you, KA --use the GF multipurpose mix, the popover recipe on the back; delete the melted butter & use the drippings from the roast).
I'm not a big cake baker for numerous reasons and though I'm a bit laothe to buy one pan for one cake for one night, if the recipe were right doesn't have to be layered), I'd consider it.
IS there such a thing? Gluten Free Red Velvet Cake...?

As far as most people are concerned a RVC is nothing but a chocolate cake with lots of red food coloring. Now, that said, why can't you find a mild GF chocolate cake recipe and add lots of red dye to it? Would that work? I don't really know, but seems like it would. One thing. I'm not sure how your celiac friend would react to all the food coloring. Some people, especially those with gut disorders, have lots of trouble with food coloring. I'd check first.

Cindy -- Thanks for the reply. I also thought RVC had cocoa powder in it (an maybe a touch of espresso powder, too). Hadn't heard about celiacs & food dye -- good catch.
I was also looking at the reviews for the KA GF Chocolate cake. I'm now thinking of something on the order of a sheet version with the cocoa &/or espresso (decaf)...maybe a few chips thrown in (can there ever be too much chocolate? Particularly for Christmas?).
There will be 2 kids coming as well & I just found out one is allergic to nuts, as is one of the other adults.
More I think about this, the closer I'm geting to Chocolate Overload (with a lightly flavored whipped cream...)!

Yes, RVC has cocoa powder, but not espresso powder. The Chocolate Overload sounds good. You might be able to to a GF Chocolate Cake in a jelly roll pan, then roll it up with the whipped cream in the center, like a Yule log. I THINK you could do the GF cake in this pan so you wouldn't have to get a special pan. Someone at the KAF hotline should be able to tell you. The hotline number is: 802.649.3717.
