Refrigerator cookie short cut

I have an idea for a refrigerator cookie short cut that I would like advice with. I purchased the ready made refrigerator rolled cookie dough with plans to doctor up the dough. I plan to re-blend the dough with pistachios, dried cranberries and eggnog extract, roll, chill, and bake.

Do you think they will turn out ok?

I am far from an experiencedl baker, but my first thought is that reblending the dough (I assume you mean in a mixer or something) might make the cookies tough by overworking it.

If It was my dough here's what I'd do: roll out the dough into a rectangle. Sprinkle on the add-ins you mentioned above, and then roll it up nice and tight. Wrap it with saran wrap and refridgerate it for a couple hours to let everything come together. Then take it out, slice it into the individual cookies and bake.

I am super late too! I haven't gotten around to sending out that email I was telling you about. I'm still planning on it though! I'll be going home probably just the Saturday and Sunday of Christmas. I figure any responses that come in after that I can stick in a nice box and send over together. The best address is the same one as the return address on the box I sent you - 62 Fogg Farm Rd, White River Junction Vt 05001, and just mark it to my attention.

The only thing about those rolls of dough is that, to me, they taste really salty. And this coming from the Queen of Salt. I love the stuff, esp. sweet and salty but those cookies seem too much. Make sure your pistachios aren't salted!

I thought I would update this post and let you know what i did. This idea turned out better than I expected. I used an extra large roll of refrigerator cookie mix and added about one and a half cups of dried fruits and nuts, whatever I had on hand, plus 1 tsp of eggnog flavoring. Mixed it all on very low speed for about 2 minutes then scooped out into 1 tbsp cookies. I baked low and slow, 300 degrees for 35 minutes.

Lots and lots of compliments! On another occassion I added king Arthur's flor di scilia to rave reviews!
It is a great way to make home made cookies when time is short.

Sounds good. Could also do with homemade dough, roll, wrap and freeze. Then thaw and slice when you want cookies.
