Do Italian Ricotta Cookies need to be refrigerated after baking?

Hi JaneDough - I just looked at a recipe for "Ricotta Drops" from Nick Malgieri's book, Cookies Unlimited. Nothing is mentioned about refrigerating these type of cookies after they're baked. I have never made ricotta cookies. I usually make ricotta pies, which definitely require refrigeration. But if I were ever to make these cookies, I wouldn't refrigerate them. Besides, I trust Nick - he knows his stuff!

Thanks Calico. I also heard from an Italian friend of mine who says she leaves her out unless she wants them to last longer and then she pops them in the fridge. Here in Delaware lots of folks have memories of their Italian Grandmas making these cookies.
