Small, Professional, Stone Deck Ovens

I am planning to open a small bakery with limited space for an oven (approx 5'6 x 7').
Does anyone have any recommendations?

I was considering the Empire Vapour Tube, the Rembrandt Mini Vapour Tube from Unisource (model 48) and also the baby rembrandt X12. The "baby" version is much less expensive but I am concerned about the quality.

Does anyone have any experience with any of these models? Any recommendations or warnings would be appreciated.

Hi Amy,

I work with a lot of different equipment when out on the road for King Arthur and also WP Bakery Group. I have not actually worked with the ones you mention here. I recommend checking as many references as possible when purchasing equipment and try to talk with bakers that produce similar products to what you plan to make.
Call and speak with the tech for that company and ask where they are located and see how long it would take for them to get to you if you need help in the middle of the night. Ask about real world scenarios and test the waters.
There is a big difference between ovens and there can be be quality swings from the cheap models to the more expensive. Learn as much about them as you can before committing to a company. In a sense you will be marry them for a while.
