Starter Left Out Too Long?
I ordered and received my KAF starter this week. I started it according to the directions included however, I waited a few hours longer than indicated in the instructions in the final two "2-4 hour" rest periods, by a few hours each time. When it was time to transfer them to their new homes, quart sized mason jars, they were very sticky and tough to get into the jars. They are now in the fridge waiting for me to bake with them in the morning. Since I left them out longer, did I ruin them or is there something else I need to do to ensure they stay healthy?
Thank you so much!

It sounds like your starter may have too much flour in it. The consistency should resemble a thick waffle batter. If you are planning to bake with them the next day, you should leave them out at room temperature so that the starter is active for your recipe. Please call our baker's hotline for more starter care advice.

Rest assured it's very hard to destroy a starter, short of baking it.
