zo/apple cake
Hi..Wanted to know if anyone has tried the recipe that came with their Zo for dutch apple cake? I am trying it now, and so far the batter is like glue!! Will let you know how it turns out..

Talking of cake, I glimpsed an American show the other day about what cakes TV cooks like and where they eat them. There was one on a chocolate dulce de leche cake that looked interesting. Chocolate cake, chocolate mousse, a crisp chocolate layer, dulce de leche and ganache I think. I'm going to have to try to find the show again - I think hubby wants me to try to make one for his birthday! If anyone knows the recipe....

Sandra, you know the layers, why can't you just put together your own recipe for this cake? Was the crisp on the bottom? Or over the top of the mousse?
Maybe done in a springform, with a chocolate cake on the bottom, the cold mousse layer, then the crisp and dulce de leche then unmold it and pour a ganache over the whole thing?
You could come up with a recipe for this with both hands tied behind your back, girl! Go to it!

Of course I could come up with a recipe (and no doubt will) but I can't remember the exact details of what the layers were or in what order. It was however just stacked and then covered with ganache. I also remember the cake bit was moistened with a simple sugar syrup but the choc cake recipe I shall use is so moist it won't need it!

Funny, this is the EXACT site I found. I knew you would go there. I know you can guess really, really well! I'm betting the crisp layer was between the mousse and the dulce layer to keep them separated. But I'm not sure how you would do it. Any ideas?
You might have to do a cookie (Oreo-type) layer in the bottom of a springform pan, then remove it and place it on the mousse layer. What do you think? Certainly the crisp wasn't on the bottom. You wouldn't really need it on the bottom if you had the chocolate cake as a first layer.
Just throwing ideas out there. And phooey on them for guarding their secrets. Who do they think we are, some silly little neophytes who can't figure out a simple cake recipe? They don't know with whom they butt heads. Our heads are much harder than theirs........uh, is that a good thing?

The crisp layer was very simple, just bits of a biscuit set in a thin layer of chocolate. I am thinking that something light and crisp like an oat flake cereal would work nicely.....
I assume the reason for the secrecy is that they don't want other bakeries to copy their cake, after all they charge (I think) $8 a slice!
It's a shame I can't make it in secret as a surprise for him but he's around all the time!

The thing is that anyone can get a slice of that cake and come pretty darned close to duplicating it. Don't you think? Maybe not the exact recipe, but close and sometimes better! Like you said, you're not going to need the syrup part because your chocolate cake is moist enough without it. So, your chocolate cake is better than theirs.
If you want to keep a recipe a big, deep, dark, secret.........don't sell the cake to the public. Now they have their cake all over the television and Internet. Did they really think nobody would think, hey, I can make THAT!!! Maybe not as pretty, but it will taste great.
You could put the parts together separately and on his B-Day, assemble the thing. Would he notice that?

I am so, so sorry...I got caught up with work (self employed) and have not signed on for a week..The Apple Cake was just ok.
I think it came out the way it was supposed to, just not very exciting..The taste was somewhat bland and the texture bordered on bread like instead of cakelike..Would not make again...Promise I will not post a question unless I am able to check responses in a more timely manner.

That's okay, weplant, we were just giving you a hard time. Believe me, we have ALL been in your shoes. Sorry the cake didn't turn out better, but now we know!
